Zucchini Pesto Pasta

Instructions: #1 use a vegetable spiralizer, mandolin slicer, or peeler to thinly slice the entire zucchini into pasta ribbons #2 heat the oil in a large skillet over medium heat. Add the zucchini noodles and salt, using tongs to toss. Cook while stirring occasionally for 3-5 minutes until zucchini releases juices #4 reduce the heat to low, stir in the pesto, and cook tossing continuously until the pesto melts into a sauce about 2-3 minutes #5 divide between two bowls, if desired add pepper and top with grilled or broiled salmon (optional)

 

Ingredients for Zucchini Pesto Pasta:

  • 4 unpeeled zucchinis ends cut off

  • 2 tablespoons extra virgin olive oil

  • 1/4 tsp fine sea salt

  • 1/2 cup arugula pesto (in sauce recipes below)

  • freshly ground black pepper
