Whole Roasted Chicken and Herbs
Instructions: #1 preheat the oven to 450 degrees F and remove the giblets from the cavity of the chicken and place on a roasting pan #2 create a rub by mincing 1 tablespoon of the fresh herbs and combine them in a small bowl with the oil, salt, and pepper #3 stuff the cavity of the chicken with the onion, lemon, garlic, parsley, and remaining herbs. Then pull the skin to cover the opening #4 cover the entire chicken with the herb rub and cook until the thermometer inserted in the inner thigh registers 165 degrees F, about 1 hour. Let cool about 15 minutes before serving
Ingredients for Chicken and Herbs:
1 whole chicken preferably organic and pasture raised
5 sprigs of fresh herbs (oregano, sage, and thyme)
2 tablespoons extra virgin olive oil
1 tablespoon Redmond or sea salt
2 tsp freshly ground black pepper
1 yellow onion sliced
1 lemon cut into wedges
3 smashed cloves of garlic
a bunch of fresh parsley
