Raw Chocolate Mousse Cake

Instructions: #1 in a high powered blender blend all base ingredients until you achieve a chunky, paste like consistency, it should be sticky but if its too dry add more coconut oil #2 line a 10inch springform pan (stainless steel) with unbleached parchment paper and press base into the pan #3 blend the mousse filling until you get a smooth whipped cream texture #4 pour mixture on top of base and freeze for 6-12 hours, slice and serve

 

Ingredients:

  • 2 cups raw unsalted almonds

  • 2 cups medjool dates (take the pits out)

  • 1/4 cup cacao powder

  • 1/2 teaspoon sea salt (redmond)

  • 2 tablespoons cacao nibs

  • 1 tablespoon coconut oil

  • FOR MOUSSE FILLING: 3 ripe bananas sliced

  • 3/4 cup coconut sugar

  • 1/3 cup cacao powder

  • 3 tablespoons coconut oil

  • 1 14oz can of coconut cream
