Lemon Olive Fish

Instructions: #1 preheat oven to 450 degrees F, then get two 15 inch sheets of unbleached parchment paper. Fold each sheet in half, width wise, then open back up and place each fillet just before the crease #2 top each fillet with a pinch of salt and pepper and divide the oil, sage, lemon slices, and olives between the two fillets #3 fold over the top half of the parchment paper then tightly roll the edges of the paper to conceal the fish into a package #4 place the sealed packets on a baking sheet and roast in the center of the oven for 8-10 minutes (depending on the fillets thickness) #5 transfer to a plate and eat right out of the packets or dump on the plate and enjoy!

 

Ingredients for Lemon Olive Fish:

  • 3/4 pound favorite flaky fish (salmon, sole, arctic char, tilapia, halibut) cut into 2 fillets

  • fine sea salt

  • freshly ground black pepper

  • 1 tablespoon extra virgin olive oil

  • 6 fresh sage leaves or thyme sprigs

  • 4 thin lemon slices

  • 1 cup kalamata olives pitted and sliced
