Hawaii’s Coconut Bread
Instructions: #1 set rack to middle position and preheat oven to 325 degrees F #2 in a cup or bowl stir together milk and vinegar and set aside for 10 minutes #3 in a large bowl combine flour, sugar, baking soda and salt #4 in a separate bowl combine bananas, butter, eggs, and vanilla #5 add the wet to the dry and stir till combined well #6 lightly flour a 8 1/2 x 4 1/2 inch loaf pan and pour the batter in, then sprinkle half the cacao chunks and half the coconut onto batter and mix into batter with a fork #7 bake bread for 55 minutes then sprinkle the remaining coconut and cacao on top
Ingredients:
1/4 cup plant based milk (ingredients should just be water plus the nut)
1 teaspoon pure apple cider vinegar
1 cup kamut flour or other organic flour
1/2 cup coconut sugar
1 teaspoon aluminum-free baking soda
1/2 teaspoon sea salt (redmond)
1 cup mashed overripe bananas (about 2-3 large bananas)
1/2 cup grass-fed butter
2 pasture raised eggs
1 teaspoon pure vanilla (extract or bean stalk)
1 cup 100% pure cacao bars(roughly chop)
1/2 cup unsweetened coconut chips or flakes
